For many years I was a room mother. As a result, I was on the constant lookout for something I could take to school parties kids would gobble up, but wouldn’t put anyone in a sugar coma. These little muffins seem to fit the bill for many reasons. The recipe make a bunch! All you need is about three or four of the miniature or tea size muffin pans. Next, the recipe calls for less than one cup of sugar and a whole cup of healthy applesauce! Finally, every time I carried them to a school event I always came home with an empty container…in my opinion a thumbs up.

I had found the recipe years ago in a woman’s magazine, made a couple of adaptations and set about preparing it so many times I had the recipe memorized. I have since lost the original recipe, but this is mine and I have shared it with many school moms over the years.

Super duper easy to make…great for carrying to pot lucks, school events, or just to have on hand around the house. They make a great after school snack. And, the best seal of approval, Tall & Handsome gives them his thumbs up of approval. Winking smile

Miniature Applesauce Muffins

½ cup butter

½ cup sugar

2 eggs

1 cup applesauce

2 cups all purpose flour

1 tablespoon baking powder

1/2 teaspoon kosher salt

½ teaspoon cinnamon

1 teaspoon pure vanilla flavoring

1. In a bowl mix together the dry ingredients, including the cinnamon. Set aside.

2. In another bowl cream butter, then gradually add sugar and continue beating until fluffy.

3. Add eggs, applesauce and vanilla flavoring to butter mixture. Mix until combined.

4. Next add the dry ingredients to the applesauce mixture and mix just until dry ingredients are combined. DO NOT OVER MIX.

5. Pour batter into prepared miniature muffin tins. (You may grease the tins or use liners. I like to use the little foil liners.)

6. Bake at 400° for 12 to 15 minutes. Remove from oven and cool.

7. Next dip the tops of the muffins in melted butter and then dip in topping. (Recipe for topping follows.)
