Golden Pecan Pie

By Beverly Hicks Burch

I’ve been making this pie for years…if the truth be known, decades would be more like it. It is a perennial favorite and request. It is also one of the ways I “WOWED” and wooed my Tall & Handsome when he first came to Alabama. The man loves pecan pie, but had never had a homemade pecan pie in his life. The first time I made one for the holidays he thought I was his own private crazy mix of Einstein and a Paula Deen clone. He would have walked on hot coals for me that day…or at least given me a really good back rub and foot massage Smile

A big bonus is the pie is super easy to make!

Golden Pecan Pie

¾ cup sugar

1 heaping tablespoon all purpose flour

Pinch of kosher salt

3 eggs, beaten

1 cup light corn syrup

1 teaspoon vanilla

2 tablespoons butter, softened

1 cup chopped pecans

1 unbaked 9 in. deep dish

1. Combine dry ingredients in a large mixing bowl.

2. Add eggs, syrup, vanilla and butter.

3. Beat with an electric mixer until all ingredients are well blended.

4. Stir in pecans. Pour into the pie shell.

5. Bake at 350° for 55 to 60 minutes.

I’ve never made a pecan pie, but I really should. It looks fantastic.
