Beer Baked Northern Beans with Rosemary

For my birthday this year Tall & Handsome presented me with one of my all time favorite presents…the ColorNook from Barnes and Noble. I think the gift had a subtle double edge, back-saving, space-saving all around “let’s make life a little easier” purpose behind it, too. You see, T & H had just spent time making two more moves relocating our copious library of books, quilting books and magazines and cookbooks and cooking magazines!

He had begun to identify with Quasimodo …he went around humming show tunes from Phantom of the Opera a lot…

Now before I move on to the main purpose of this blog, I’d like to say this…if you are in the market for an eReader, please, please, please consider the ColorNook by Barnes and Noble. Yes, I know the Kindle has been wildly popular, around for a while and boasts some supposedly neat features like “no glare while reading in the sun!” But, folks let me ask you this, “Do you know how many times I’m going to be set out in the sun and read…just for fun?” About as often as I’ll go streaking down the local mall…just for fun (streaking is running around madly without cloths and in my case self inflicting black eyes. In my case that would happen never or when Hades freezes over!)

The best and greatest features of the ColorNook? COLOR!! Duh!! And, the fact that it has back light allowing you to read it in the dark…kinda like when you were a kid and used that flashlight under the covers when you were suppose to be sleeping…

Recently I subscribed to Martha Stewart’s Everyday Food on my Nook and found a recipe I just had to try. (Yes, another advantage…no piling up magazine laying around while you wait to try that one recipe). This was a baked bean recipe with a little twist…and of course I took it and Bevized it and tweaked it a little myself. I made it last week and we ate pumpernickel bread and thoroughly enjoyed it. Healthy, low-fat, full of protein with hearty bread…what could be better?

Beer Baked Northern Beans with Rosemary

Inspired by a recipe from Martha Stewart’s Everyday Food

6 slices bacon, cut in 1 inch pieces

1 medium sweet onion

4 cloves fresh garlic or 1 clove elephant garlic

2 tablespoon mustard, Dijon or Honey Mustard

1 tablespoon honey

1 large sprig fresh rosemary

1 pound dried Great Northern beans (wash, and soak overnight in water and drained)

2 12oz bottles Blue Moon beer

2 cups low sodium chicken broth

1 teaspoon kosher salt

½ teaspoon pepper

2 tablespoons cider vinegar

1. Preheat oven to 350°.

2. In a Dutch oven cook bacon over medium heat until bacon is crisp and brown, about 5 minutes. Remove from pan with a slotted spoon and set aside.

3. Increase heat to medium high. Add onion and garlic and sauté until onion is translucent about 4 minutes.

4. Add honey and mustard and cook 1 minute.

5. Add rosemary, drained beans, beer, broth, salt and pepper. Bring to a boil. Cover and now place in the preheated oven.

6. Bake until beans are tender or for about 2 hours. Then season with the vinegar additional salt and pepper if needed. Stir in the reserved cooked bacon.
