Bev’s Buttermilk Pancakes

I planned on making these if it snowed again. It didn’t, but I made them anyway Smile .

Bev’s Buttermilk Pancakes

2 eggs, beaten

2 cups buttermilk

¼ cup oil

1 teaspoon pure vanilla flavoring

2 cups all purpose flour (lightly fill measuring cup)

2 tablespoons sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon kosher salt

*optional ingredient ¼ – ½ cup chopped pecans

1. Heat griddle to 350° – 400°. I have found that griddles vary.

2. Mix together dry ingredients and set aside.

3. Combine wet ingredients.

4. Add wet ingredients to dry ingredients and mix just until large lumps disappear.

5. Pour about ¼ cup of batter for each pancake onto a heated and greased griddle (I use a non-stick cooking spray).

6. Cook on first side until bubbles begin to form on the surface of the pancake. (*If you would like to make banana pancakes, this is the step in which you would add thin slices of bananas to the surface of the pancake and the cook.)

7. Flip pancakes so other side can cook and allow to cook until golden and cooked throughout.

I love to serve my pancakes with hot applesauce that I have sweetened just a tad and added cinnamon to then heated up on the stove top or microwave. YUM!
