Today’s recipe comes from a reader who has contributed a tasty recipe before. Joan’s recipe today is Tex – Mex Meatloaf. Does that sound great or what?

Tex – Mex Bacon Meatloaf

You will LOVE how this taste Texas and Mexico flavors in this meatloaf. When you are able to perfect a meatloaf recipe to a science, you’re doing good!! Very moist and the flavor will floor you!!!

PREHEAT OVEN: 375 deg.

2 lbs. of Ground Sirloin

2 lbs. of Ground Chuck

5 Strips of Cooked Bacon

1 cup Green, Red, and Yellow Bell Peppers (diced)

1 Tomato (diced)

1 packet of Onion soup mix

1 large Jalapeno Pepper (diced)

1-1/2 Tablespoon of Soul Seasoning

1-1/2 Tablespoon of Mrs. Dash

½ cup of  Ketchup

1-1/2 cup of Heintz 57 Steak Sauce or Generic brand

2 eggs unbeaten

1 cup of oatmeal

In a large mixing bowl, combine sirloin and chuck together; mix well. Add the 2 eggs, oatmeal, onion, diced peppers( Bell & Jalapeno) diced tomato.  Mix all ingredients in well.

Put Mrs. Dash, Soul Seasoning, ketchup, and 1/2 cup of the 57 steak sauce into mixture and blend in. Pour meatloaf into a large meatloaf pan or a rectangular pan. Square up the meat and being a round form on top. Make a little trench on the top of the meatloaf and put 1/2 cup of the 57 into the trench.

Bake for 45-55 minutes or until the meat isn’t pink in the middle of the meatloaf.  Pour the rest of the 57 sauce on top of meatloaf and spread over then place the 5 strips of bacon on top; let it sit in the oven for 5 minutes.  ENJOY!!!!
