Chicken Dinner in Foil Packets

I made this dish for dinner the other night and T & H really enjoyed it, so of course this will be on the menu again. The packets are super easy to make and clean up is next to nothing. The original recipe was in the 2011 Taste of Home Annual Recipe cookbook, but of course, once again I Bevized it. End result was a “Wow!” from T & H.

As we were eating, my brain was churning away at another variation I’ll include at the end of the recipe. I’m sure that if you wanted to you could probably also cook this dish on the grill.

Chicken Dinner in Foil Packets

2 boneless, skinless chicken breasts

4 small red potatoes, sliced thinly

¾ cup grated cheddar cheese

½ sweet red bell pepper, julienned

½ sweet yellow bell pepper, julienned

3 tablespoons Jack Daniels No. 7 Barbecue sauce

1 green onion, chopped

¼ teaspoon kosher salt

1/8 teaspoon pepper

1. Preheat oven to 375°.

2. Tear off 4 strips of aluminum foil about 18 inches long. Also, cover a baking sheet with foil.

3. Place one chicken breast in the center of one piece of foil each (this will use 2 of the 4 strips).

4. In a bowl mix the sliced potatoes, red bell pepper, yellow bell pepper, grated cheese, green onion, kosher salt and pepper. Divide evenly and place half the mixture over each of the chicken breasts.

5. Next, pour 3 tablespoons of barbecue sauce over each chicken breast/ vegetable mixture.

6. Now, cover each packet with the remaining strips of foil. Fold up the sides around the ingredients to tightly seal the packets.

7. Place the packets on the foil lined baking sheet and cook 25 – 30 minutes. When done open carefully to allow steam to escape.

**Variation: For a “tropical” flare, I would add 1 stalk or ring of chopped fresh pineapple to the vegetable mixture and create a glaze using 3 tablespoon Jack Daniels’ No. 7 Barbecue sauce with 1 tablespoon orange marmalade for each packet and pour the glaze over each.
