Three Cheese Rotisserie Chicken Lasagna

Years ago I made a version of this recipe that came out of a BHG Dieter’s Cookbook. I always savored the wonderful, tasty twist on lasagna and thought I’d make it again. Well, it took me a few years, and a few new products later I came up with a new version. (Of course, I have to do that Bev-izing don’t you know! ;)) If you’re looking for change from the same old everyday lasagna…then, this is it!

I’ve updated the recipe by using rotisserie chicken, thus saving the time consuming step of baking, stewing, grilling, etc. the chicken first. Also, I used a can of Campbell’s Healthy Request Cream of Chicken Soup. I’ve also made a few other changes that I think just improve the overall taste.

I made this for dinner last night and Tall & Handsome gave it a definite thumbs up and decided it will become a permanent item on our rotating menu.

Three Cheese Rotisserie Chicken Lasagna

8 oz lasagna noodles

½ cup chopped onion

½ cup chopped green bell pepper

¼ cup butter

1 can Campbell’s Healthy Request Cream of Chicken soup

1 – 4oz can sliced mushrooms, sliced

2 – 4oz jars chopped pimientos

1/3 cup low fat milk

½ teaspoon dried basil

1 ½ cups cottage cheese

2 cups (about ½ a rotisserie chicken) chopped or shredded rotisserie chicken

1 ½ cup shredded cheddar cheese

1 cup fresh grated Parmesan cheese

1. Cook lasagna noodle according to package directions. (You will use about ½ box.) Drain well.

2. Meanwhile, sauté chopped onion and chopped bell pepper in the butter until tender.

3. Stir in soup, mushrooms, pimientos, milk and basil.

4. Spray a 13 x 9 baking pan with a cooking spray like Pam. Layer ½ of the lasagna noodles in the bottom of the pan.

5. Next add half of the soup mixture, and half of the cottage cheese, chicken, cheddar cheese and Parmesan cheese.

6. Repeat layers starting with the lasagna noodles and finishing with the remaining ingredients.

7. Bake at 350° for 45 minutes.
